Grilled shrimp, ripe mango, buttery avocado, cucumber, red onion, cilantro, and a chili lime dressing. Tropical, protein-packed, and incredibly fresh.
Toss raw shrimp with lime zest, chili, garlic, salt, and oil. Marinate 10 minutes minimum.
Cook shrimp in very hot pan 90 seconds per side. Pull the moment they turn pink and curl. Overcooked shrimp taste like rubber.
Whisk lime juice, fish sauce (or soy), honey, and minced chili. Balance salty, sweet, sour, and heat.
Fan avocado and mango on platter. Add cucumber and onion. Top with warm shrimp. Pour dressing and scatter cilantro. Serve immediately.
